The journey began with James Politis, who the first of the Politis family restaurants, Lackawanna Restaurant in the Hoboken Terminal.

James' son, George James Politis, Sr. owned the exclusive Union Club in Hoboken, a meeting place for the who's who of the city through the 70's. George, Sr. opened GP's East Rib and Grill along the cliff on Boulevard East with breathtaking views of the NYC skyline. In 1977, GP's moved down the road to its current location on 69th in Guttenberg. George Politis Jr. continues the tradition of Hudson county hospitality with the opening of GP's in Hamilton Park in 2012, a beautiful park side dining location in historic downtown Jersey City.

After 8 impeccable years in Hamilton Park, the Politis trio decided to redirect their efforts and concentrate on their gem, the original GP's Restaurant in Guttenberg.
